What do vegans use instead of eggs in baking?
Probably the question that gets asked the most. Due to me personally having an egg allergy for the past 12 years I have managed to learn the best alternatives for vegan baking.
Flaxseed or Chia Seed “Eggs”: Mixing ground flaxseeds or chia seeds with water creates a gel-like mixture that binds ingredients together, similar to eggs.
Aquafaba: The liquid from canned chickpeas or other legumes, known as aquafaba, can be whipped into a foam or used as a binding agent in baking.
Silken Tofu: Blended silken tofu adds moisture and binding properties to baked goods, serving as a substitute for eggs.
Commercial Egg Replacers: There are several commercial egg replacers available, typically made from starches and leavening agents, designed specifically for vegan baking.
Bananas or Applesauce: Mashed ripe bananas or applesauce can serve as a natural binder and add moisture to baked goods, often used in recipes like muffins and quick breads.
Commercial Egg-free Yogurt: Certain brands offer dairy-free yogurt alternatives that can be used as egg substitutes in baking.
