This recipe for Air Fryer Jacket Potatoes is so simple and delicious with almost no prep! It is super versatile and, depending on the toppings, naturally vegan and gluten-free! Jacket Potatoes go crispy much faster in the air fryer than oven.

If you haven’t tried a jacket potato in the air fryer, this is your sign! It is such a great way to enjoy a classic dinner. It’s very hands-off and leaves you with a perfectly soft inside and a nice crisp skin.

One thing that I love about this jacket potato air fryer recipe is that you can make a single baked potato in air fryer! It’s perfect for someone living on their own! You can easily add in a few more if you are cooking for more. Make sure to leave room around each potato for the air to flow. Also, be prepared to add some more cooking time if you have more than one in the air fryer at a time. You’ll be an air fryer jacket potato ninja in no time!

  1. Baking Potato – I just use one for this recipe, but you could adjust the cooking time if you do more than one at a time.
  2. Extra Virgin Olive Oil – gives a beautiful flavour and helps to crisp up the outside of the potato.
  3. Pinch of Salt – is a simple but perfect addition to the potato.
  4. Toppings of Choice – The sky is the limit here! There are so many great topping options!

Substitutions

  • Baking Potato – You could also use a sweet potato for this recipe, but you would need to adjust the cooking time.
  • Extra Virgin Olive Oil – Any neutral oil with a high smoke point should work.

Variations

  • Spicy – Rub some chilli powder, cayenne pepper, paprika, or cumin on along with the salt for a spicier potato. You can also top with spicy chili, sriracha beans, or my Spicy Butterbeans recipe.
  • Deluxe – There are so many amazing toppings for baked potatoes! You could prep a whole array of ingredients so everyone can make it their own. I definitely recommend my Slow Cooker Vegan Chili along with some chopped veg and vegan sour cream or serve it with my or Mixed Bean Salad in the summer months.
  • Kid friendly – Jacket potatoes in air fryer are great for kids because they are so easy to customize. Keep it simple with some butter and cheese or let them have fun dressing it up.

How to make Air Fryer Jacket Potato

Step 1: Firstly, poke some holes in the potato with a fork or skewer. Rub the olive oil onto the potato and sprinkle over the salt.

Step 2: Place in the air fryer at 200c for 45-55 minutes. The time will depend on the air fryer and the size of the potato. Turn over halfway through to ensure an even crisp on the skin.

Cut open and serve with toppings of choice.

Hint: Poke a skewer through the potato to check it is soft throughout before removing it.

Leftovers

Store extra jacket potatoes in an airtight container in the fridge for 3-4 days. Reheat in the air fryer, microwave, or oven. You can also freeze them for up to 3 months. Reheat frozen jacket potato in air fryer for 15 minutes or so until heated through.

Do you need to use aluminum foil to cook jacket potatoes?

You don’t! It actually takes slightly longer to cook them in aluminum foil because the foil has to heat up first. There is no need for the aluminum foil. Simply rub some oil and salt on the potatoes and stick them straight into the air fryer or oven!

Ingredients 

  • 1 baking potato
  • 1 tsp extra-virgin olive oil
  • Pinch salt
  • Toppings of choice

  • Should you wish, you can microwave for 8 minutes before putting in the air fryer for 20-25 minutes.
