Slow Cooker Jacket Potatoes are my absolute favourite potato recipe! They are the quite possibly the easiest thing you can make! With just one ingredient, you can’t get much simpler when it comes to easy recipes! Not only are they’re super affordable too, they come out soft and delicious every time! Definitely give them a go!

Why this recipe works

These Slow Cooker Jacket Potatoes come out perfect EVERY TIME! I prefer to bake my potatoes in the slow cooker as you can just put them in the slow cooker before you go to work and have delicious, fluffy baked potatoes with minimal effort or time invested. Jacket potatoes are such a versatile recipe as you control what you top them with, so it is a great way to have a meal that is easily customised for a variety of dietary needs!

In addition to only one ingredient, slow cooker recipes are great because they only need the slow cooker! No extra dishes to dirty! The simple steps are ones that anyone can follow. This is a super affordable main course or side dish that is sure to please the whole family! If you don’t have a slow cooker, fear not, you can also cook these baked potatoes in the oven as well!

This recipe was inspired by my Herb Salted Hasselback Potatoes, another mouthwateringly good potato recipe! Both potato recipes, pair well with this amazing Mixed Bean Salad recipe. Ingredients to make Slow Cooker Jacket Potatoes

  • Baking Potatoes – are the main ingredient and only ingredient needed in this recipe! Common baking potatoes are russet potatoes and white potatoes. I tend to opt for Maris Piper or King Edward potatoes for extra fluffiness! If you have any spare do try my Loaded Potato Skins.

Substitutions

  • Baking Potatoesanother option for this recipe is to use sweet potatoes! They generally take less time to cook, so adjust the cook time accordingly.
  • Slow CookerWhilst I think the perfect baked potato comes in the form of these slow cooker potatoes, there are a lot of ways to get delicious jacket potatoes! The air fryer will give you crispy skin with a fluffy texture inside. Oven-baked potatoes are really similar to crock pot baked potatoes. The instant pot is another popular way to get some delicious jacket potatoes. You could even use jacket potato cookers in the microwave!

Variations

  • SpicySlow cooker jacket potatoes are so easy to spice up! Top with jalapeños and hot sauce for a spicy treat! You could also top with my Spicy Butterbean recipe
  • DeluxeIf you want to up your game or have dinner guests, why not create a jacket potato bar! For the ultimate baked potato bar, you need a collection of your favourite toppings! My personal favourite topping is my Slow Cooker Vegan Chili. It really elevates a loaded baked potato! Some other great toppings are vegan cheese, vegan sour cream, green onions, salt, black pepper, vegan bacon bits or my Crispy Rice Paper Bacon, and guacamole.
  • Kid friendlyThis is a great recipe for children as it is nice and simple! Serve with some vegan cheddar cheese or even my Chickpea Mayo Salad (this is a vegan alternative to tuna mayo)

How to make Slow cooker Jacket Potatoes

Step 1: Firstly, prick the potatoes with a sharp knife to allow steam to escape. Then, wrap the potatoes in tin foil.

Step 2: Place potatoes in the slow cooker and allow to cook for 5 hours on high or 8 hours on low.

Hint: The size of the potatoes will affect the cooking time. Large potatoes may need more time while smaller potatoes may need less. An easy way to check for doneness is to prick potatoes with a knife, fork, or toothpick to see if they are the correct consistency. They should be fork tender.

Leftovers

Slow cooker baked potatoes are very easy to store! If you have extra potatoes, make sure to unwrap them from the aluminum foil and allow them to cool, and then store them in a container covered with a lid, foil, or plastic wrap. They will last 3-5 days in the refrigerator. They should not be left at room temperature.

You can also freeze them and just reheat another day in the microwave, oven or air fryer.

There are a lot of great ways to take your slow cooker jacket potato to the next level when you reheat it! You could serve them up as potato skins. You could also even turn them into mashed potatoes! Another way would be to incorporate them into a casserole…the potential is endless! Pretty much any potatoes recipe can use your leftover slow cooker potatoes.

What if I don’t have a slow cooker?

If you don’t have a slow cooker, you are in luck! Jacket potatoes can be made in a variety of ways! You can make jacket potatoes in the oven on a baking tray, in an Instant Pot, in the Air Fryer, or even in the microwave!

How long do you cook jacket potatoes for?

For crock pot/slow cooker potatoes, I recommend cooking them on high for 5 hours or on low for 8 hours. Different types of potatoes and the size of your potatoes will determine the proper cook time.

How long do jacket potatoes take in oven?

At about 200C / 390F, jacket potatoes will take around 45-60 minutes to cook. Cooking potatoes can be a little tricky as the type of potato and size of the potato will affect results. For best results, make sure to check that you have tender potatoes with a fork or knife before taking them from the oven.

Do you need to rub potatoes with anything before making jacket potatoes in slow cooker?

Some people like to rub sea salt or a little olive oil on their baked potato in slow cooker, but it is not necessary! I just wash my medium potatoes, dry them with a paper towel, wrap them in foil, and start cooking them!

How do you get perfect potatoes?

The best way to get a fluffy potato is to make a baked potato slow cooker meal. Slow cooking is great because your potatoes cook all day and then can be kept on the warm setting until you are ready to eat. It is a delicious way to enjoy potatoes and a perfect addition to your recipe rotation!
