This Air Fryer Aubergine is such a great way to enjoy aubergine! It is an easy recipe with just a handful of simple ingredients easily found at grocery stores. Eggplant in air fryer is a healthy, quick, and low carb way to whip up a snack or side dish!

I am a big air fryer recipe fan. They are usually so quick and easy to make and this air fryer eggplant is no different! Air fryer aubergines have a crispy texture around the skin, but the flesh is also tender at the same time. It’s an incredibly easy side dish that everyone is sure to love!

If you are new to cooking eggplant, don’t be afraid! This simple recipe is a great way to get started. 

The flavourings make it more of an Asian eggplant recipe, but with a few tweaks, it would make for a healthy side dish to complement any main course. There’s no doubt that aubergine in air fryer will be a great addition to your recipe collection. Try out this delicious recipe – you won’t be sorry!

  1. Aubergines – aka eggplant are the star of this recipe!
  2. Tamari or Soy Sauce – gives a nice umami flavour to this recipe.
  3. Maple Syrup – brings a tad of sweetness.
  4. Sesame Oil – gives a bit of a nutty flavour.
  5. Sesame Seeds – add a nice difference in texture.
  6. Fresh Parsley – is the perfect way to top off this recipe.

Substitutions

  • Tamari or Soy Sauce – You could also use Liquid Aminos.
  • Flavourings – If you don’t want an Asian flair to this aubergine air fryer style, you can try other seasonings such as garlic powder, onion powder, Italian seasoning, lemon juice, black pepper, or kosher salt.
  • Sesame Oil – If you are changing up the flavours, try a neutral oil such as avocado oil or extra virgin olive oil. Just be sure to use high smoke point oils in the air fryer.
  • Sesame Seeds – For a nice crunch, but a different flavour, try some Panko breadcrumbs.

Variations

  • Spicy – sprinkle some red pepper flakes into the sauce before cooking for a spicy flavour.
  • Deluxe – Don’t skip out on the chopped parsley if you’re going for a deluxe dish.
  • Kid friendly – Kids may prefer a more toned down flavour with some basic seasonings and a marinara sauce to dip the air-fried eggplant slices in.

How to make Air Fryer Aubergine

Step 1: Firstly, cut the end top off the aubergines and slice into long “chip” shapes. You should get about 9 bits per aubergine.

Step 2: Add the eggplant to a large bowl along with the tamari/soy, maple syrup and sesame oil. Gently mix together until all the aubergine is covered.

Step 3: Transfer to a large air fryer basket and air fry for 6 minutes at 200°C (390°F). Transfer any leftover sauce from the bowl into a small shallow bowl for dipping into later.

Use tongs to remove from the air fryer and plate up. Top with a sprinkle of sesame seeds and chopped parsley (optional) and serve with any of the leftover sauce for dipping!

Hint: Be sure to place aubergines in a single layer in the air fryer so the hot air can get to all of the eggplant pieces. This may mean you need to cook them in more than one round.

Leftovers

If you have leftovers of this crispy air fryer eggplant recipe, store them in an airtight container for up to 3 days. You can reheat them in the microwave, but they’ll crisp up much better if you reheat them in the air fryer.

Recipe FAQs

How do you cook aubergine without it going soggy?

If you have trouble with your aubergine coming out soggy, you can try salting the sliced eggplant for an hour or so prior to starting the recipe. This will draw out some liquid. Then drain it, pat it dry, and follow the recipe!

Can I make this air fryer recipe in an oven?

Absolutely! Any time you see an air fryer recipe, you can cook it in an oven. The end result will be a little different. The air fryer generally does a better job of getting those crispy edges. It also takes a bit less time to cook. That being said, they will taste delicious in an oven as well!

Tip 1: Cooking time may vary based on thickness of the aubergines, size of air fryer, and even style of air fryer.
Tip 2: Place the cooked aubergine on some paper towels if you want to absorb some of the oil after cooking.
Tip 3: There are a lot of ways to play around with this recipe! You could try different seasonings or sprinkle with parmesan cheese or mozzarella cheese. Consider a garlic sauce or another favourite dipping sauce if you go this route.
