These Air Fryer Hasselback Potatoes are so simple to make and yet still so delicious! The air fryer gives a nice crispy skin while the inside is still soft and perfect. They are the perfect side dish! With only 7 ingredients, most likely already in your pantry, this is a fun and easy recipe to whip out on short notice!

Why this recipe works

Potato recipes are some of my favourites (hence why I do a lot on the website)! It is amazing how many different things you can do with potatoes. These Hasselback Potatoes in air fryer are one of my new favourite ways to enjoy them! They make for a delicious side dish or even a main course if you use larger potatoes and add heartier toppings!

Hasselback simply refers to cutting thin slices of potato that don’t quite go to the bottom of the potato. They end up looking like accordion potatoes! It allows more of the potato to be cooked to crispy perfection and allows more flavour in between each slice. This hasselback potatoes recipe is definitely a great way to level up a regular baked potato!

These crispy air fryer hasselback potatoes are great all year round and easy enough to make as an amazing side dish for family dinners during the week. The best part is that even though they’re easy to make, they look fancy enough that they are a great addition to your next holiday feast, dinner party, or other special occasion.

  1. Potatoes – I use Maris Piper or All Rounder potatoes. If you have spare do also try my Potato Cakes for a fun side dish!
  2. Fresh Rosemary – is a match made in heaven with potatoes.
  3. Fresh Thyme – brings a bit of a citrusy flavour to these Hasselback Potatoes Air Fryer style.
  4. Garlic Powder – gives a classic umami flavour.
  5. Onion Powder – pairs perfectly with garlic powder.
  6. Sea Salt – accentuates all of the other flavours.
  7. Extra Virgin Olive Oil – helps the salt to stick and also helps to get those crispy edges.

Substitutions

  • Potatoes – While I lean toward Maris Piper or All Rounder potatoes, any will work! You could use yukon gold, new potatoes, russet potatoes, or even sweet potatoes!
  • Fresh Herbs – Feel free to try other herbs such as fresh chives. You could also use dried herbs if needed.
  • Seasonings – You could adjust seasonings to better match your main dish if it has a different flavour profile.

Variations

  • Spicy – Mix in cumin and cayenne pepper to your salt mixture for a nice and tasty side dish with a kick.
  • Deluxe – Top with your favourite combination of melted butter, sour cream, green onions, parmesan cheese, or garlic butter.
  • Kid friendly – Some shredded cheese on top is often a favourite among kids.

How to make Air Fryer Hasselback Potatoes

Step 1: Firstly, slice thin cuts (most of the way through) all the way across the potato with a sharp knife.

Step 2: In a small bowl add the finely chopped rosemary and thyme along with the garlic powder, onion powder, and salt. Mix together.

Step 3: Place the slicing potatoes into a large bowl and plate and drizzle over the oil and top with a generous pinch of the herb salt before gently massaging to try and get some of the oil and herb salt into the potato slices. Make sure to get the side of the potato and tops of the potatoes as well.

Step 4: Place potatoes in the air fryer basket in a single layer with a little space between each so the hot air can reach everywhere and air fry at 195C (380F) for 40 minutes.

Hint: Too keep yourself from slicing too far, place each potato on a wooden spoon and slicing downwards as the spoon as opposed to a cutting board.

Leftovers

Leftover potatoes will keep in the fridge in an airtight container for 3-4 days. Reheat in the microwave until warm or the air fryer until crispy.

Recipe FAQs

Is it better to soak potatoes before air frying?

It is certainly an option, but is not necessary. Some say the whole potatoes in water will lead to more crispy potatoes. You can choose to soak them in cold water for 1-24 hours or in hot water for about 10 minutes.

Why won’t my potatoes cook in the air fryer?

In an air fryer, it is very important that the hot air can reach everywhere. Make sure that you have room in between each of the potatoes.

Equipment

  • 7 medium potatoes, (I use Maris Piper or all rounder)
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp sea salt
  • 2 tbsp extra virgin olive oil

Instructions 

  • Firstly, slice thin cuts (most of the way through) all the way across the potato. A tip to stop you slicing too far is by placing each potato on a wooden spoon and slicing downwards as the spoon stops you going too far.
  • In a bowl add the finely chopped rosemary and thyme along with the garlic powder, onion powder and salt and mix together.
  • Place the sliced potatoes into a large bowl/plate and drizzle over the oil and top with a generous pinch of the herb salt before gently massaging to try and get some of the oil and herb salt into the slits.
  • Place in the air fryer basket with a little space between each and air fry at 195°C (380°F) for 40 minutes.

To Store: Store in an airtight container in the fridge for 3-4 days. Reheat in the microwave or air fryer.
To Freeze: Store in an airtight container in the freezer for up to three months. Defrost in the fridge and then reheat in the microwave or air fryer.
Tip 1: Air Fryers can vary in cooking time. Larger potatoes will also need more time to cook, whereas small potatoes would take less. Check the doneness of the potatoes, especially the first time.
Tip 2: These could also be cooked on a baking sheet in the oven if you don’t have an air fryer. Here is my recipe for delicious Hasselback potatoes in the oven.
Tip 3: Make sure your potatoes are similar in size so they cook evenly during the cooking process.
