Prep Time 2 minutes

Total Time 12 minutes
Servings 1 portion

Ingredients

  • 150 grams of brown rice pasta/spaghetti (I use Doves Farm)
  • 3 tbsp olive oil
  • 10-12 plum tomatoes cut into quarters
  • 1 garlic clove crushed
  • pinch of chilli flakes
  • 1/4 tsp paprika
  • 3 tbsp tomato puree
  • 1 tsp miso paste
  • 1/4 small bag baby spinach leaves
  • small handful fresh basil leaves
  • Juice of 1/2 lemon
  • Salt & Pepper

Method

  1. Place the pasta in boiling water and allow to cook for about 10 minutes.
  2. Pour the olive oil, garlic and a pinch of salt and pepper into a pan on medium heat until the garlic is bubbling.
  3. Add the chopped tomatoes and allow these to cook for 3-5 minutes until they have browned off a little and softened.
  4. Next add the chilli flakes, paprika, tomato puree, miso paste and pinch of salt and pepper and stir these until mixed together at which point add in the spinach and half the basil leaves allowing them to wilt down.
  5. Once the pasta is cooked lightly drain and add straight into the pan.
  6. Now stir in the lemon juice and its ready to serve, finish by adding the left over fresh basil leaves.

Tips

This dish can be made hotter just by adding more chilli flakes and paprika, its also great with grilled chicken on top or mixed in.

  3. Hi James thanks for the great recipes I love them! I live in South Africa and can’t find miso paste anywhere, can I leave it out or can you suggest something similar to substitute it with?

  4. Hey Chelsea,

Thank you for your support on my recipes πŸ™‚

As for miso, that’s very frustrating! Are you not able to order it online either? To be honest it really makes this sauce “powerful” with real depth of flavour. I have done a little searching online for ideas on what you can use instead of miso paste and it says tahini and add salt! I haven’t tried it but maybe that is something you can try? (That’s if you can actually get tahini in SA?)

Sorry I couldn’t help much more!

    James
