These Sweetcorn Fritters are sure to be one of your new favourite recipes! They are SO easy to make and ready to enjoy in under 30 minutes! They are easily made gluten-free and vegan and full of healthy ingredients that are easy to access.

Why this recipe works

Corn fritters are the perfect appetizer or side dish. They are sweet and delicious and have such a fun crunch to them! They are great as a snack, appetiser, or side dish. You could even beef them up to make them the main attraction!

As a bonus, these fritters are healthy, yet still so tasty! My recipe doesn’t use any eggs and I use Soya rather than milk to make them vegan.

  1. Oil – Vegetable oil or olive oil would be great for this recipe.
  2. Flour – is what helps to form the batter. I opted for gluten-free.
  3. Baking Powder – helps the fritters to be perfectly crisp.
  4. Salt & Pepper – seasons these fritters to perfection.
  5. Milk – of choice! Adds a bit of moisture to the fritters.
  6. Spring Onions – are a nice, mellow flavour addition.
  7. Red Bell Pepper – add a pop of colour along with a great taste and a bit of crunch.
  8. Frozen Corn – should be thawed before using.

Substitutions

  • Flour – Can be replaced with other gluten free flours such as gram flour or chickpea flour.
  • Vegetables – You can easily change up what vegetables you include in this recipe. Some good options are zucchini, tomato, carrots, or spinach.
  • Frozen Corn – If you want to cut your own corn kernels off the cob, you are welcome to, but it is just as delicious (and much easier) with frozen corn.

Variations

  • Spicy – For spicer fritters, add some cayenne pepper, chili powder, or crushed red pepper flakes.
  • Deluxe – Mix in or top with some herbs such as fresh parsley or fresh coriander and a squeeze of lime.
  • Kid friendly – Some people like to serve up corn fritters with maple syrup – that may be a great way to serve them up for kids!

How to make Sweetcorn Fritters

Step 1: Start by preparing your veggies; thinly slice the green onions and finely chop the bell pepper.

Step 2: Make your base; add flour and baking powder in a bowl. Add milk and season to taste with salt and pepper. Stir until the batter comes together.

Step 3: Stir in chopped veggies and corn. Stir to combine.

Step 4: Heat 2 inches of oil in a skillet. Drop ¼ to 1/3 cup of the batter into the heated oil. Slightly flatten the fritters with the back of the spoon. Fry the fritters for 3-4 minutes over medium heat or until golden. Remove the fritters from the frying pan and place them on paper towels to drain. Serve the fritters warm.

Hint: If you want to use less oil, you can also fry these up in the air fryer!

Leftovers

Store in an airtight container in the fridge for a couple of days. Enjoy cold or reheat in the microwave, a pan, an air fryer, or a toaster.

Recipe FAQs

Why are my fritters not crispy?

There are a few things that can cause this. If your batter is overly wet, they may end up soggy. Add some more flour and/or baking powder to help with this. Another problem may be that you put the fritters in the pan before the oil was hot enough.

What do you eat Sweetcorn Fritters with?

Sweetcorn Fritters go great with green salads, potato salad, vegetables, or some grilled meat.

Are Sweetcorn Fritters healthy?

Yes! Sweetcorn is full of fiber, protein, minerals, and vitamins. Adding more veg only makes them better!

  • ½ tsp baking powder
  • Salt and pepper, to taste
  • 125 ml milk, I used soya

Tip 1: If you want to add some protein to your sweet corn fritters, you can mix in Greek Yogurt, chickpeas, or even some finely chopped meat or tofu.
Tip 2: These easy sweetcorn fritters are a great recipe to add some flavour to. You could try smoked paprika, garlic powder, or onion powder.
Tip 3: If you don’t feel like frying and don’t have an air fryer, you can also bake these corn fritters in the oven.
