Start by preparing your veggies; thinly slice the green onions and finely chop the bell pepper.
Make your base; add flour and baking powder in a bowl. Add milk and season to taste with salt and pepper. Stir until the batter comes together.
Stir in chopped veggies and corn. Stir to combine.
Heat 2 inches of oil in a skillet. Drop ¼ to 1/3 cup of the batter into the heated oil. Slightly flatten the fritters with the back of the spoon. Fry the fritters for 3-4 minutes over medium heat or until golden. Place the fritters on paper towels to drain. Serve the fritters warm.
