Introducing my Crispy Parmentier Potatoes that are about to become your new perfect side dish! These crispy potatoes are the perfect combination of a soft inside, crunchy and golden brown on the outside. It only takes 5 ingredients, yet is full of flavour.

Potatoes are an amazing food that can be cooked in so many different ways! From baked potato to fried potatoes to roast potatoes, there are a lot of options. These easy homemade Parmentier potatoes are definitely going to make it onto your regular meal rotation as their the perfect versatile potato side dish. While these warm and crispy diced potatoes in oven may be thought of most commonly in the fall or winter months, they really are delicious year round! Ingredients to make Parmentier Potatoes
- Potatoes – I recommend using King Edward, maris piper or similar. If you have spare lying in the cupboard then do try my Loaded Potato Skins or Potato Cakes.
- Extra-Virgin Olive Oil – hot oil helps to roast these potato cubes to a delicious crisp.
- Garlic Cloves – fresh garlic bring a deep flavour that makes these potatoes shine.
- Fresh Rosemary – pairs perfectly with garlic and potatoes.
- Salt – is always a great finishing touch.

Substitutions
- Potatoes – if you don’t have King Edward potatoes available, some other great options are Maris Piper, Rooster, Russet, red potatoes or Yukon Gold.
- Olive Oil – other type of oil like vegetable oil will also work.
- Fresh Rosemary – is my favourite, but you could use other fresh herbs like basil or thyme.
- Garlic – You could swap the fresh garlic for a 1/2 tsp of garlic granules.
Variations
- Spicy – use some paprika, chilli powder, cumin, and/or red pepper flakes to bring the heat level up a notch on these potatoes.
- Deluxe – Make some Vegan Sour Cream to dip these delicious potatoes in for an extra treat!
- Kid friendly – Kids are more likely to try something new when they can dip it! Serve alongside some ketchup or ranch so they can enjoy these potatoes.

How to make Parmentier Potatoes
Step 1: Firstly, preheat the oven to 200C (390F). Pour the oil into a large baking tray and place into the hot oven whilst you dice your potatoes. Carefully add the potatoes to the pan and coat them in oil. Place them in the oven for 20 minutes.
Step 2: While the potatoes cook, crush the garlic cloves and dice the fresh rosemary.
Step 3: Remove the potatoes from the oven and give them a shake or stir. Place them back into the oven for another 25 minutes.
Step 4: Combine the potatoes with the crushed garlic, diced rosemary, and salt. Put them back in the oven for another 20 minutes, giving them a stir halfway through. Cook until crispy golden parmentier potatoes.
Hint: Don’t skip the step of stirring the potatoes throughout. It will help them to cook and crisp up evenly.
Leftover Parmentier Potatoes
Parmentier Potatoes will keep in the fridge in an airtight container for up to 3 days. Reheat in the oven or air fryer. If you use the microwave, the potatoes will likely lose their crisp.

Parmentier potatoes are a classic French dish of small cubes of potato mixed with garlic and herbs also known as pommes parmentier (crispy cubed potatoes). They are named for Antoine-Augustin Parmentier, a French pharmacist who was an active proponent of the potato.
Most Parmentier potatoes recipes call for cooking in the oven, but the air fryer is a great choice as well for cooking cubes of potatoes! It will cut down your cook time significantly compared to cooking cubed potatoes in oven. Follow this recipe and air fry at 200°C (390°F) for half the time at each stage stated in the recipe.
Parmentier Potatoes are a pretty universal side that goes great with many dishes or at a dinner party! You could try it with chicken, steak, Air Fryer Salmon or minced lamb.
Yes! When I cook parmentier potatoes, they go from raw potatoes to cooked all in the same pan! It takes just over an hour for them to cook all the way through and gives them a deliciously crispy outer shell with a soft and yummy inside.

Ingredients
- 1.2 kg potatoes, King Edward or similar
- 3 tbsp extra-virgin olive oil
- 4 cloves garlic
- 3 springs fresh rosemary
- ½ tsp salt
Instructions
- Begin by preheating the oven to 200C (390F). Pour the oil in a large baking tray and place into the hot oven for a few minutes whilst you dice your potatoes into small ish cubes. Carefully add them to the pan and coat in the oil, before placing them into the oven for 20 minutes.
- Meanwhile crush the garlic cloves and dice the fresh rosemary.
- Take the potatoes out of the oven and give them a shake/stir. Place them back into the oven for 25 minutes.
- Finally, remove from the over, combine with the crushed garlic, diced rosemary and salt before placing them back in the oven for 20 minutes, giving them a stir halfway through. Cook until crispy.
