Pre-heat your waffle machine. Add 1 tablespoon chia seeds into a large mixing bowl and cover with 3 tablespoons water and stir. Allow to soak for 5-6 minutes (until an egg like texture).
Add the flour, maple syrup, and milk to the chia egg mixture. Mix it into a waffle batter.
Pour half of the mix into the greased waffle machine. Leave the lid open for 1 minute before closing it and allowing it to finish cooking.
