Firstly, using a sharp knife, slice the sweet potatoes lengthways to produce chip-like shapes.
In a large bowl, add the sliced sweet potatoes, olive oil and a pinch of salt and pepper and shake vigorously so that the olive oil is evenly distributed amongst the sweet potatoes.
Then place the sweet potato slices in the air fryer basket evenly (ensure the fries are kept on a single layer and don't overlap) and air fry for 12 minutes at 205C (400F).
Finally, give the chips a shake and air fry again for a further 5 minutes or until cooked

Leftover sweet potato fries can be stored in an airtight container in the refrigerator for up to four days. The best way to reheat leftover fries is air frying them for another few minutes.
