  • 1 Pack Meatless Farm Sausages (available at Sainsburys)
  • 2 red onions quartered
  • 3 garlic cloves peeled
  • 1 sweet potato diced into cubes
  • 1 aubergine diced into cubes
  • 1 pepper roughly sliced
  • 5 mushrooms sliced into quarters
  • 200 g tomatoes on the vine
  • 2 tbsp dried oregano (optional)
  • olive oil
  • salt and pepper


  • Pre-heat your oven to 200C with your baking dish/tray inside
  • Meanwhile roughly chop up the veg as instructed above
  • Remove the dish from the oven and place in all the veg. Top with the Meatless Farm sausages
  • Drizzle over a generous amount of olive oil along with the oregano and a pinch of salt and pepper
  • Place back in the oven for 30 minutes at 200C
  • Remove from the oven and simply serve directly to the table ready to tuck in!


Chopping the veg to a similar size helps it to cook evenly.
Have leftovers? It's a great lunch prep to take to work. Can be eaten warm or cold.
