These wintry pancakes are just delicious. They have no flour and are just full of goodness. You can have these for breakfast or a dessert. Give them a try I’m sure you will love them!
Roughly 5-6 pancakes
Prep: 5 mins
Cooking: 10-15 mins
- 1 cup GF oats
- 1/2 cup ground almonds
- 2 tablespoons chia seeds
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 2 small bananas
- 3 tablespoons maple syrup
- 1 apple grated (I use a pink lady)
- 1 cup water
Add all the ingredients above in that order and blend until smooth batter forms.
Heat a pan with a small amount of coconut oil (tip of a teaspoon).
You want to make these pancakes fairly small around 12 cm in diameter and fairly thick roughly 1cm . The batter is fairly thick so I pour roughly 4 tablespoons of batter into the middle of the pan and shape.
Cook for roughly 1 min mins either side (you want them to be still slightly gooey inside).
Make sure to be careful when flipping them or removing from the pan as they can break.
Tip: I like top with to defrosted raspberries, blueberries and a drizzle maple syrup.
