Recently I have been craving some granola for breakfast, so I thought I would try and make a spiced wintry version. I haven’t ever made granola before but I managed to nail it on the first attempt. It’s brilliant for breakfast or even a mid afternoon snack. Just store it in an airtight container and you have enough to last the week.

Ingredients:
- 1/2 cup almonds
- 1/2 cup walnuts
- 1/3 cup pumpkin seeds
- 2 cups GF oats
- 3 tablespoons maple syrup
- 2 tablespoons coconut oil
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 apple (chopped into small pieces)
Method:
Pre heat the oven to 180C.
Firstly you need to pulse the almond and walnuts in a blender for about 10 seconds until roughly crushed.
Now place the almonds, walnuts, pumpkin seeds, oats, cinnamon, nutmeg and apple into a mixing bowl and mix.
Once all the dry ingredients are mixed together melt the coconut oil in a microwave (40-50 seconds). Stir the maple syrup into the melted coconut oil and pour over the dry ingredients.
Mix all these together thoroughly until evenly covered.
Line a baking tray with baking paper and evenly layer the mixture.
Simply place in the oven for 30 minutes making sure to mix around every 10 minutes to stop burning.
Tip: Add mixed frozen fruit (melted in the microwave) and the raw cacao sauce!
