This is a nutritious, filling and healthy snack full of good fats and protein along with the cinnamon to balance blood sugar levels which keeps you going through the afternoon. They can be stored in an airtight container so make as much as you can and take them to work with you.

- 2 tablespoons coconut oil melted
- 200g almonds
- 200g cashews
- 2 tablespoons cinnamon
Firstly pre heat the oven to 180C
Now melt the coconut oil, meanwhile pour all the nuts into a mixing bowl.
Once the coconut oil is melted pour over the top of the nuts mixing in making sure all the nuts are covered.
Now add the cinnamon and mix again until evenly covered.
Line a baking tray with baking paper and evenly distribute the nuts onto the baking paper.
Place in the oven for 15 minutes.
I prefer to let the nuts dry first but they taste great straight out the oven.
