- 1 can chickpeas, rinsed and drained (400g can)
- 100g pre cooked beetroot
- Small handful of fresh dill
- 1 tbsp tahini
- 2 tbsp olive oil
- Juice of 1/2 a lemon
- 2 pinches of salt & pepper
Ingredients for the Chilli & Basil Smashed Avo:
- 1 ripe avocado
- Fresh Chilli, finely diced (quantity depends on how hot you like it) or chilli flakes
- Small handful of fresh basil leaves, roughly chopped
- Juice of 1/2 a lime
- Pinch of salt & pepper
Ingredients for the Garlicy Cashew Cheese Spread:
- 200g cashews (soaked in hot water for 30 minutes)
- 2 tbsp yeast flakes
- Juice of 1/2 a lemon
- 70-75ml cold water
- 1 small garlic clove, crushed
- Pinch of salt & pepper
Method:
- First decide which tasty topping you would like to make for your super seed crackers
- For the Beetroot & Dill Hummus, simply add the chickpeas, beetroot, tahini, olive oil, lemon juice and salt and pepper into a blender and blend until smooth. When smooth add the fresh dill and blitz for a couple seconds until its mixed in
- For the Chilli & Basil Smashed Avo, simply add all the ingredients into a small bowl and mix with a fork. Add the amount of chilli to your taste but I roughly add 1/2 a small red chilli, deseeded
- For the Garlicy Cashew Cheese Spread, simply add all the ingredients into a blenders and blitz until smooth. If you want an even thicker consistency for the cracker place in the fridge which will help it to thicken
- Finally top your Nairn’s Gluten Free Super Seeded Wholegrain Crackers and enjoy!
