These raw cacao & orange zest energy bars are just delicious. They are really simple and quick to make and will last in the fridge in a sealed container for around 5 days (if you can make them last that long!).

Overall time: 35 mins (Includes time in the fridge)
- 200g almonds
- 200g walnuts
- 100g pitted dates (I prefer Medjool dates but normal also work well)
- 3 tablespoons cacao powder
- 3 tablespoons water
- zest of whole large organic orange
Add the almonds, walnuts and dates into the blender and blend into crumbs.
Now add the cacao, water and orange zest and blend again into a sticky mix.
Empty the mix onto a chopping board and roll into a large ball.
Pat-down the ball into a rectangular shape.
Place a layer of cling film over the top and use a rolling pin to flatten the mixture. You want it to be roughly 1cm thick. Making sure to push in the edges.
Place in the fridge for 30 mins to allow it to harden a little.
Now just slice into pieces and serve.
You can always make these into energy balls instead of bars!
Tip: I like to grate the last remaining orange zest over the top to enhance the flavour.
