Loaded Sweet Potato

This is a great lunch dish, filling and packed full of goodness.

Cooking: 45-60 minutes (due to roasting the sweet potato)

Ingredients:

  • 1 large sweet potato
  • Guacamole or hummus
  • 2 handfuls of spinach
  • 6-8 plum tomatoes
  • Smoked salmon/trout
  • Pinch of salt and pepper
  • Dash of lemon juice

Method:

Oven bake the sweet potato for about 45-60 minutes until crispy brown.

A couple minutes before the sweet potato is cooked heat a pan with coconut oil and chop the plum tomatoes in half and grill them for a couple minutes until browning at which point add the spinach and turn off the heat allowing the spinach to wilt down.

Season this with a dash of lemon juice and some salt and pepper.

Once the sweet potato is ready cut in half length ways and assemble the ingredients on top.

Layering the guacamole or hummus on first, followed by the spinach and tomatoes. Then place the smoked salmon or trout on last.

Finish off with a small dash of lemon juice along with a sprinkle of salt and pepper.
