Hippie Bowl

This Hippie bowl is an amazingly fresh, tasty and packed full of goodness.

Prep: 2 mins (if you already have the quinoa and hummus sorted)

Cooking: 3 mins (if you already have the quinoa and hummus sorted)

Ingredients:

  • 1/4 cup of quinoa
  • 1 small carrot peeled length ways
  • 1/2 small courgette peeled length ways
  • 1/2 avocado
  • Hand full of kale
  • Hand full of chopped sun blushed tomatoes/fresh tomatoes
  • Small portion of smoked trout or salmon
  • Hummus
  • 1 teaspoon of coconut oil
  • Lemon Juice

Method:

Follow the quinoa recipe, whilst this is cooking start by peeling the carrot and courgette into a bowl, season with olive oil, salt and pepper.

Then cut the avocado in half and peel one side carefully and slice. Once the quinoa is nearly cooked, lightly fry the kale and tomatoes in the coconut oil for a couple minutes also adding some lemon juice near the end.

Finally place it all on a plate not forgetting to add the hummus recipe in the middle, i advise adding some lemon juice with a sprinkle of salt and pepper to really give this dish a fresh taste.
