Guilt Free Breakfast

This is a quick,simple and yummy cooked breakfast that wont leave you feeling guilty afterwards.

Ingredients:

  • Smoked salmon/Trout
  • 1/2 avocado
  • 1/2 bag spinach
  • Tomatoes on the vine
  • Fresh lemon
  • Coconut oil

Method:

Firstly heat a griddle pan on high with coconut oil, when the pan is very hot add the tomatoes still on the vine and allow them to cook for 5 minutes or so.

Meanwhile cut an avocado in half and gently peel and place on the plate.

Now place the smoked salmon or trout onto the plate.

Now turn the tomatoes carefully just to lightly cook the vine side of the tomatoes for a minute or so.

Place another pan on heat with a small amount of oil and wilt down the spinach which only takes 1 minute.

Plate both the spinach and the tomatoes.

Season the salmon/trout and avocado with lemon juice and a pinch of salt & pepper.

Tip: you can add mushrooms to this as well easily just but cutting into small pieces and adding into the same griddle pan along with the tomatoes at the same time.
