Cauliflower Cous Cous

Extremely quick raw side that goes well with lunch or dinner. You can store this in a container for a couple days so make more and store it.

Ingredients:

  • 1/2 small cauliflower
  • Handful of fresh parsley
  • Juice of 1/2 a lime
  • Pinch of salt and pepper

Method:

Firstly cut up half a cauliflower into small pieces and place into a blender and blend until its fine and looking like cous cous.

Now add the parsley, lime juice, salt and pepper and blend again for 10-15 seconds.
