If you haven’t tried avocado pesto yet then I highly recommend it! This is such a healthy, quick and refreshing lunch or side dish.
It is packed full of healthy fats from the avocado, pine nuts and olive oil from the pesto sauce.
1-2 portions as lunch or 2-4 portions as a side
Prep: 5 mins

Ingredients for pesto:
- 1 medium ripe avocado
- 50g pine nuts
- 1 garlic clove chopped
- 3 tablespoons olive oil
- 2 tablespoons water
- handful of fresh basil
- pinch of salt & pepper
Ingredients for salad:
- 1 sprig of fresh mint leaves
- 1-2 tablespoons of pomegranate seeds
- 5 plum tomatoes halved
- 1 courgette
Method:
Firstly, prepare the avocado pesto.
Add all the pesto ingredients into a blender and whiz until smooth (I leave mine to blend for 1-2 mins).
Meanwhile spiralize the courgette and place into a large mixing bowl.
Now chop the tomatoes along with the fresh mint and add to the mixing bowl.
Add the pomegranate seeds to the mixing bowl.
Once the pesto is smooth simply poor over the other ingredients in the bowl and mix well.
Finish off with a pinch of salt and pepper to taste.
Tip: You can always just leave the salad ingredients out and just have the avocado pesto courgetti which tastes great!
Really enjoyed this recipe James… Will add a few more tomatoes and pomegranate seeds next time though to satisfy my husband’s sweet tooth
